Recipe for 2 servings 100 g (6 pieces)

150 g vegan&moi
300 g ice cold water
1 package of pasta dough (300 g)
1 onion finely diced
500 ml vegetable broth
some flour for dusting
about 2 tablespoons of egg yolk substitute or water

Prepare beforehand: 2 portions of vegetable broth with different vegetables as ingredients

Mix the onion with the vegan&moi mix. Add water to the mixture and stir well directly so that the powder is completely dissolved. Allow to swell for at least 15 minutes. Roll out the pasta dough and pipe the filling with a piping bag lengthwise (2 strips about 2 cm thick) on the lower part of the dough, spreading it lightly so that the mixture covers about ¼ of the surface. Brush the upper part of the dough with egg yolk substitute or water. Now roll up the pasta dough evenly and loosely from the bottom to the top. Dust the resulting roll with a little flour. Using the handle of a wooden spoon, divide the size of the Maultaschen by pressing down. Then cut the Maultaschen with a knife. Put the Maultaschen into boiling vegetable broth and let them cook for 10-12 minutes at low heat. Serve in the already prepared vegetable broth with vegetable garnish.
